just wanted to spread the word...International Bacon Day is this saturday (the 30th). i think i might make a bacon pin and wear it around the house while i watch my bros and sis. (my parents are going out of town this weekend and i'm doing the big sister thing.)...better yet, maybe we'll make a project out of it.

i made some bacon cheeseburger calzone the other day. i got the recipe from Rachal Ray's Everyday magazine and got the pizza dough from a local pizza joint. it's supposed to be grilled, but i baked it instead.
1 lbs refrigerated pizza dough
1 tbsp extra virgin olive oil, plus more for brushing
3/4 lbs groung beef
5 slices of bacon
1/2 small onion, finely chopped (i didn't use this, but i will include the step)
3/4 cup shredded cheddar cheese
salt
2 plum tomatoes, chopped (i actually used sundried tomatoes)
1. preheat oven to 350 degrees. split the dough into two balls, and place in a large bowl greased with 1 tbsp olive oil. cover with plastic wrap and rest at room temp for 15 minutes.
2. brown and drain ground beef. then put it in a large bowl.
3. cook the bacon in the same skillet.
4. in the same skillet (with the drippings), cook onions over medium heat until softened.
5. add onions and crumble the bacon into the beef. added cheese to the mixture and season with salt.
6. roll out your dough (about 12 inch round) on a lightly floured surface. place half beef mixture on half of the rolled out dough and top with tomatoes. fold the dough over and crimp at the edges. brush with olive oil and bake for about 20 minutes or until brown. repeat for the second dough.
done! it serves 4 people and was pretty filling. i ended up forgetting to season the beef mixture so we ate it with ketchup. i thought it turned out alright but my food critics (J and Meg) thought it could be better. isn't weird how a little bit of salt goes a long way?

Hi, I was wondering if we could put your bacon recipe up at internationalbaconday.blogspot.com (actually the recipe site that we link to with it) I don't think I'lve seen a bacon calzone yet, but it sounds delicious.
