Oatmeal Raisin Cookies!!!
after two hours of surfing the internet this evening, i finally found a cookie recipe that i could use. the original recipe is from Cooks.com. i had to alter it a bit cause i had to make do with the ingredients i had on hand:
2 1/4 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon +
1 stick of unsalted butter, softened +
1 stick of salted butter, softened +
1 1/4 c. brown sugar, packed
1/2 c. granulated sugar
2 large eggs
1 tsp. vanilla extract
1/2 tsp. water
2 c. oats +
1 c. raisins +
1 1/2 cups of coarsely chopped walnuts +
+ things i added/ did differently
1. whisk flour, baking soda, and salt together
2. mix butter, brown sugar, and white sugar together until the they are blended well together
3. add the eggs, vanilla, and water.
4. add the flour mixture, be sure to add a little at a time and mix at a slow speed (this is where i add the cinnamon)
5. stir in the oatmeal, raisin, and walnuts until well blended
6. with an ice cream scooper or a spoon, drop the dough onto a greased pan or foil-line baking sheet
7. bake at 350 for 12 minutes or until golden brown
with this recipe, you could make approximately 30 cookies (yes, i counted them)...i had so much fun making these cookies, they turned out really well and really tasty. the fun part was improvising, although a little nerve wrecking, and adding walnuts to it without telling JR (he's not a fan of nuts). i even got to break out my new hand mixer that's been in the box for about a month now. who knew cooking from scratch was so much fun! i think i should do this more often.
