here's the story:
when i was younger, we used to go to my uncle's mom's (Grandma June) place for the holidays. she would always have these mini cookie sandwiches in tins waiting for us to take home. since we loved it so much, she eventually gave us a recipe.
i would sometimes watch and help my aunt and uncle (i used to live with my aunt and uncle) make these cookies...mostly eating them though. but since they have both moved back to Thailand, i haven't had these cookies in years.
i was going through my boss' recipe book the other week and stumbled upon a recipe that looked like Grandma June's cookies. i was stoked and asked for a copy right away. anyhow, i tried out that recipe last night! it was pretty close, but no Grandma June's.
...and just cause i'm nice, i'll share that recipe with you! and cause i had altered the recipe a little, and they're not exactly GJ's cookie recipe, i'd like to call it...
Pang's Purple Pleasures! (giggle, giggle, giggle)
cookie:
1 cup butter (melted)
1/3 cups heavy whipping cream
2 cups all-purpose flour
filling:
1/2 cup butter
1 1/4 cups of confectioners' sugar...and then a 1/4 more
2 teaspoon vanilla extract
about 3 teaspoons of heavy whipping cream
food coloring
1. wait until butter is a little cooled off, then combine butter, cream, and flour. mix well.
2. cover and refrigerate for 2 hours.
3. after you divide it into thirds, let one sit at room temperature for 15 minutes. refrigerate the rest.
4. on a cleaned and floured surface, roll out dough until about 1/8 in thick.
5. cut with a 1 1/2 in round cookie cutter. i used...
...a Rolling Rock beer fez as the cutter and a drinking cup as the rolling pin. what? i don't have a rolling pin or a cookie cutter!
6. dip cut out dough in some sugar (both sides) - any kind of sugar (i used purple sanding sugar)
7. placed on ungreased baking sheet and prick with a fork, a few times.
8. bake for 7-9 mins at 375 degrees
9. cool on wire racks
icing:
1. cream butter and confectioners' sugar in a bowl.
2. add vanilla
3. tint
4. add more sugar and whipping cream then mix again.
5. spread on cookie and connect the two halves. and there you have it!
YUM! even my professionally trained pastry chef friend (you know who you are) approved!
